quail eggs wrapped in homemade duck sausage infused with DBA, rolled in bread crumbs, Pale 31 aioli, Pale 31 aioli

2nd Course – Wet Hopped Crudo
hamachi, shaved fennel, pumpkin ribbons, micro herbs, yuzu, IPA, amarillo hop French gray salt
Paired with – Speakeasy Wet Hop Big Daddy IPA
3rd Course – IPA Ceviche
halibut in citrus juice, Union Jack IPA, mango, red onion and peppers, IPA foam

4th Course – Braised Beef Short Ribs
Imperial Red Ale braised short rib with parsnip Red Ale purée, malt glazed baby purple carrots and ale reduction
Paired with – Speakeasy Mickey Finn Imperial Red Ale
5th Course – Deconstructed Ruben
Porter pastrami brined lamb cheek with smoked tomato “special sauce”, rye DBA spätzle, malt vinegar cured red cabbage, Swiss cheese air and candied caraway seeds
Paired with – Firestone Reserve Porter
6th Course – Assorted Cheese & Charcuterie
Humboldt Fog goat cheese, aged gouda, gorgonzola, duck prosciutto, lardo and nduja
