TheFullPint.com had the chance to chat with Greg Koch, at the 2010 Great American Beer Festival. We found Greg inside the GABF Farm to Table Pavilion, where he was pouring the herby Dogfish Head / Victory / Stone Saison du BUFF collaboration beer, paired with Mini Rosemary Buffalo Burgers with Windsor Dairy Bleu Cheese & Caramelized Onions on a Brioche Bun, and the Stone Brewing Co. Sawyer’s Triple, pairing it with a Spice Cake with Roasted Pear Compote & Honey Goat Cheese Cream. Greg was gracious enough to step away from his official duties to offer up his advice on navigating the GABF floor, how to best select which booths to visit and which beers to try.
