LoveLikeBeer Presents Cornucopia
Corn gets a bad rap, and perhaps deservingly so, since it seems like this punch-packing kernel is used for just about every other purpose except the culinary (see glue, fuel, and sugar substitute). That’s why we thought we should keep it real (the corn, that is) and build a vegan beer dinner around it with our friends at The Linkery, San Diego’s pioneer farm-to-table, whole food and craft beer eatery. Chefs Keith Adams (The Linkery) and Max Bonacci (sister restaurant El Take It Easy) are creating a modern twist on Meso American cuisine, creatively incorporating corn and house made Masa into just about every dish. These a la carte offerings, meaning no advance tickets or prix fixe menus, will be artfully paired with custom cask ales from San Diego’s award winning AleSmith Brewing Co.
First Course
Grilled purple potato, local greens, cornmeal dusted sweet potato crisps, tomato & pepita dressing
Paired with AleSmith X (draft)
Second Course
Wild mushroom tamal, yellow corn posole broth, local cabbage & radish
Paired with Anvil ESB w/ smoked hatch chiles (cask)
Third Course
Vegan “charcuterie” board: salt cured beets & nopales, roasted vegetable pate, toasted cashew apple jam, mini blue corn tortillas
Paired with Lil’ Devil (draft)
Fourth Course
White turnip pibil tostadas, with grilled pineapple, pickled red onion & micro cilantro on yellow corn crisps
Paired with AleSmith IPA w/ pineapple & guava (cask)
Fifth Course
Roasted oyster mushroom, carrot and kale in mole, black eyed peas, brown rice, epazote chochoyones
Paired with Nut Brown Ale w/ toasted pecans (cask)
Sixth Course
Oaxacan chocolate cornmeal cookies, toasted nuts, local fruit preserve, mint
Paired with Speedway Stout w/ cinnamon & cocoa nibs (cask)
“Custom Ales?” you ask? Yes, the almighty beer makers at AleSmith will be augmenting the flavors of their signature and seasonal beer line-up to specifically pair with each dish for this event. Look forward to never-released nor conceived twists on your favorite AleSmith ales, from the hoppy and pale to the dark and powerful, all showcasing culinary ingredients placed in the casks themselves enhancing and complimenting the flavors in the chefs’ creations.
Keeping true to the LOVELIKEBEER spirit, 15% of the entire night’s revenue will fundraise for an inspiring local charity. We are honored to be partnering with the talented and impassioned Engineers Without Borders – San Diego, a non-profit, humanitarian organization that works with developing communities worldwide to improve quality of life. We thought these folks were a perfect fit for CORNUCOPIA, an evening dripping with international flare.
