TheFullPint.com had the chance to catch up with “Dr.” Bill Sysak at Falling Rock Tap House after day two of the 2010 Great American Beer Festival. Besides his day job as Beverage Coordinator for Stone Brewing World Bistro & Gardens, Dr. Bill is a beer pairing genius, and he often hosts “Master Pairings” events at Stone Brewing Co.
In his “spare time,” Dr. Bill likes to dig deep into his impressive personal cellar and host tastings for friends and craft beer aficionados. Bill will once again be breaking out some rare beers and putting on his Annual GABF Falling Rock Beer Tasting. He was gracious enough to take a break from sipping his 2007 Cantillon Iris and tell us a little bit about it.
