Chifa To Host Brewmaster Tom Kehoe For Yards Beer Dinner
Philadelphia, PA – On Thursday, September 30, at 7 p.m., brewmaster Tom Kehoe of Yards Brewing Company will host the latest in the ongoing series of Craft Beer Dinners at Chifa. The dinner will feature four courses of Chef Jose Garces’ inspired Latin-Asian cuisine paired with Kehoe’s acclaimed beers. The cost will be $65 per person, excluding tax and gratuity, and reservations are required.
“Yards produces some terrific local craft beers that pair beautifully with Chifa’s Latin-Asian cuisine,” says Chef Garces. “I’m looking forward to showcasing some of the finest our kitchen has to offer alongside some of the best beers produced in Philadelphia.”
The menu will include:
- Opah Tiradito with Peruvian tartar sauce and tempura fall vegetables, paired with Philadelphia Pale Ale, a crisp, hoppy ale bursting with citrus flavors and aromas;
- Poached Halibut with boniato, sweet potatoes and soy glazed Brussels sprouts, paired with Extra Special Ale, a robust and hearty amber ale with a malt body and aromatic hop finish;
- Spruce Smoked Lamb Loin with forest mushrooms, Richter Farm berries and pine nut puree, paired with Poor Richard’s Tavern Spruce Ale, based on Ben Franklin’s original recipe, which called for spruce essence and molasses, as barley and hops were not readily available at the time;
- Five-Spiced Rhubarb “Cobbler” with Tavern Porter ice cream, paired with General Washington’s Tavern Porter, a molasses-based porter with a deep garnet hue.

Chifa opened in early 2009 to critical acclaim; The New York Times praised the restaurant’s unusual ability to “kill two cravings [Asian and Latin] with one dish,” while Philadelphia magazine called Chef Garces’ innovative interpretations of Peruvian cuisine “a cross-cultural thrill ride…A meal at Chifa is a night out, a form of entertainment, an infusion of world culture, a culinary education, something to brag about the following day.”
