Beer pairing: White (Belgian-style Witbier – 5.2% ABV)
2nd Course: Dungeness crab salad with fresh papaya, chile flakes, chive oil and sweet potato chips
Beer pairing: Vintage ‘09 Fluxus (Saison – 8.3% ABV)
3rd Course: Spring asparagus soup, deglazed with Confluence, garnished with pancetta and hollandaise
Beer pairing: Confluence (American Wild Ale – 7.4% ABV)
4th Course: Short Ribs braised in Curieux, glazed with house-made bourbon BBQ sauce, and served with white cheddar grits
Beer pairing: Vintage ‘08 Curieux (Bourbon Barrel-aged Belgian-style Tripel – 11.0% ABV)
5th Course: Tcho Cocoa Nib-Odyssey crème brulee with raspberries
Beer pairing: Odyssey (Belgian-style Strong Dark Ale – 10.0% ABV)
