New partner for chocolate? It’s beer
Pairing chocolate with wine is so passé.
What’s in: pairing chocolate with beer.
Not as in a Hershey’s bar with a Bud. Rather, pieces of Cote d’Or Lait Intense with Brouwerij Lindemans Pomme Lambic.
The result, says independent chocolate expert Dana Zemack, appearing at the Candy Expo, is a pairing that leaves a lingering warmth on the tongue.
The taste sensation is the result of the smooth, honey-caramel sweetness of the Belgian-style malt beverage and the smooth, textured sweetness of the three-layered Belgian confection that sandwiches dark chocolate between milk chocolate.
Zemack predicts chocolate-beer pairings will become the interactive entertaining trend of fall and winter.
“Whether you’re entertaining for two or 20, all you need are several varieties of high-quality chocolate bars, several varieties of incredible beers, ales or stouts, a small bouquet of flowers and napkins,” Zemack says. “The pairings will provide a huge conversation piece.”
She also pairs Brouwerij Lindemans Framboise Lambic, a raspberry-infused beer, with Cote d’Or Noir 86 percent Cacao, an intense dark chocolate bar, and apple juice-infused Pomme Lambic with Cote d’Or Noir Orange 64 percent cacao, a dark chocolate bar with a rich orange center and pieces of candied orange zest.
