Peachy Bones
Another offering from our “Bones” series, featuring the fermentation of fresh fruit. In this instance, California white peaches from Sanger, CA are fermented for four months with a brett’d saison that has been maturing for 12 months in French oak barrels. The synergy between fresh peach, wild microflora & oak components create a bright white peach flavor mingling with spicy yeast & oak aromas. Soft acidity & a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction.
Zinskin
Firestone Walker was born in the vineyards of Santa Ynez Valley in 1996 & Barrelworks carries on the tradition of working with & learning from our cousins in the wine sector. For this collaboration, we tapped into Sherman Thacher of Thacher Winery, capitalizing on his love for and experience in the beer & wine industry. Dark secret: Sherman was a brewer before a winemaker. For ZinSkin, we used his 2015 freshly pressed Zinfandel grape skins & fermented them with one of our wild beer creations in 100% American oak barrels. The result is delicious: toasty oak, vanilla, coconut, cinnamon & leather tussle with field herbs of sage, lavender & mint. Vinous notes as well as cherry, brambles and watermelon flavors are supported by an earthy, funky, yeasty nose. Velvety tannins accompany a wonderful acidity and carbonation.
Reginald Brett b1
Available in bottle for the first time ever! Once a Liberal Party politician in the U.K., the “Viscount Esher,” aka Reginald Brett, left a strong impression on his native England as this latest offering from Barrelworks will leave with you. Yet another Barrelworks creation with DBA roots, this beer begins as Double DBA & is selectively matured in bourbon barrels for several months. A further 18 months of secondary fermentation & additional maturation in French & American oak barrels creates unparalleled depth & complexity. This hefty brew is brimming with a full spectrum of flavors and aromas: Nutty sherry aromas mingle with Oak, then give way to a Cointreau-like boozy orange zest. Tart cherries linger as the acidity builds on the palate. Vanilla, nutmeg, and cinnamon provide a supporting cast. The whole experience is reminiscent of a Manhattan cocktail. To be sipped and savored.
