Clown Shoes Beer – Pecan Pie Porter Coming Soon
Clown Shoes Beer is set to release Pecan Pie Porter. Here is a draft of the label they plan on using as well as a look into the process behind the beer.
Dan Lipke, Jeff Leiter, and Sean Geary have been working on a Pecan Pie Porter for a little while now and think we are ready to roll the dice on this one, even though we didn’t quite get where we wanted to with the test batches. Dan has shown an amazing ability to make tweaks and even some major adjustments as we take our concepts to the big equipment. Kind of like a great chef, going with the inspiration that cometh.
The base beer that Jeff crafted using Dan’s recipe ended up a little on the sweet side, almost a milk stout rather than a porter. The beers have all finished drier when brewed in the tanks at Mercury instead of in the homebrew carboys, mostly because it is easier to control the yeast when working with the larger volume. We expect that to help. Additionally, we are going to add some extra hops into the kettle. Bitterness and balance should cometh.
Jeff did an amazing job with the recipe he was given, enough so that we are confident we understand this brew and what needs to change.
To get pecan flavors we will be using organic pecan concentrate and organic butter pecan extract. We arrived on these after a fair amount of trial and error. Though not in vogue, I believe high quality extracts are the best and certainly easiest way to add flavor. The key is to be subtle, as we want to make beer, serious beer, not soda.
This one should be ready in about three weeks. Hopefully our gamble pays off, and you enjoy can enjoy a Pecan Pie Porter on your holiday tables.
