It’s warm out there, so for July, let’s go with a recipe that can be cooked on the grill. Keep the heat out of the kitchen! This one’s got a bit of a tang to it.
Grilled Pork Chops in Teriyaki Style Beer Marinade Serves 6.
2/3 cup soy sauce
1/4 cup sweet sherry
1/4 cup cider vinegar
1/3 cup sugar
2 tablespoons chopped fresh ginger root
2/3 cup beer (not dark)
six 1-inch-thick rib or loin pork chops
In a saucepan combine the soy sauce, sherry, vinegar, sugar, ginger root, and beer.
Simmer the mixture until it is reduced to about 1 1/3 cups, and let the marinade cool until it is room temperature. In a shallow baking dish large enough to hold the pork chops in one layer combine the pork chops and the marinade, turning the chops to coat them thoroughly.
Cover the chops and let them marinate overnight in the refrigerator.
Pour the marinade into a saucepan and boil it for 5 minutes.
Grill the pork chops on an oiled rack set about 4 inches over glowing coals, basting them with the marinade during the last 5 minutes of the cooking time, for 8 minutes on each side, or until they are just cooked through.
For winter weather, you may also broil the pork chops on the rack of a broiler pan under a preheated broiler.

This is the newest brewery in MA! Ben Roesch is the brewer there, you may remember him most recently from Nashoba Valley Brewery. Ben is a most excellent brewer and you’ll love his beers. Stop by and give Ben and Honest Town a warm welcome to the local beer scene.

Many of you know this is one of my favorite beerfests. Good brews, great blues, good food… A great time to be had by one and all!

A Brewery’s Passing
Sad News from Owen O’Leary’s
As of this time, Owen’s O’Leary’s brewpub out of Natick MA is no longer in operation. It is a real sad day when a good local brewery closes it’s doors. Dan Kramer, and Dave Thompson were the brewers there, and they did a fine job of creating and brewing beers for the masses. Both have won medals for their brewing expertise at Owen’s.
Owen’s will be having their line of beers contract brewed, so you’ll still be able to get it at your local Owen O’Leary’s restaurant.
The good news for us at Deja Brew is that Dave Thompson will be back brewing with us for a bit, so don’t miss him! Stop on by and brew with Dave today! I’m happy to have him back, I hope you are too!
