Others have done it, but never quite like this – nitrogen forced brews add a depth of flavor and full body excitement. SanTan Brewing Company has developed a special blend of Arizona’s first nitrogenated black IPA, Negro Nitron.
Negro Nitron was brewed with a special malt product called Midnight Wheat by Briess Malting Company’s. Midnight Wheat offers a deeply charred black roast with ruby red hues for a delicious flavor combination. SanTan Brewing Company selected the wheat based malt to eliminate the sharp and acrid characteristics that often come from the husks in barley based malt.
The wheat malt used in brewing Nitro Negro pairs perfectly with Summit hops – known for its low co-humolene content which produces very clean hop bitterness without the lingering oiliness. Negro Nitron is also dry-hopped with Cascade – a piney resin aromatic yeast.
Try Negro Nitron in SanTan Brewing Company’s Mole Beer Can Chicken developed by Chef Dennis Martinez. The new brew also pairs well with wild boar chili and a New York strip covered in blue cheese. Beer Can Chicken Mexican Mole Rub
2 Tbsp of kosher salt
4 Tbsp of “Dagoba xocolatl” organic drinking chocolate
4 Tbsp of Masa Harina
4 Tbsp of chili powder
1 Tbsp of Mexican oregano
1 tsp of ground cumin
1 tsp of granulated garlic
1 tsp of granulated onion
½ tsp of ground nutmeg
All spices are dry and combined make about 1 cup of rub, which is enough to cover a large 3 ½ -5 pound chicken inside and out.

Mmmmmmmm….I’m actually sitting at the bar at SanTan enjoying one on this mighty fine Friday afternoon. Such a smoooooth brew with a beautiful black amber hue. Try it as a black n tan with Devils Pale Ale or Hopshock IPA. Pure deliciousness!
