Pipeworks Brewing Releases Two New Beers Today
(Chicago, IL) – Pipeworks Brewing is dropping two new beers today in their Dojo, located at 3912 W Mclean Ave in Chicago. Here are all the details on Baked and Layered as well as Mango Lassi.
Baked and Layered ~Imperial Stout with chocolate malts, lactose, cacao nibs, toasted coconut, and vanilla~
This is an ultra velvety batter-like beer packed with chocolate nuances from layers and layers of chocolate malts and toasted coconut. We were inspired by the best part of a German chocolate cake – the fudgy batter. When drafting this recipe, one of us actually said, “what if we use all the chocolate malts. Every chocolate malt!” We did just that. All the gentle roast character blends so well with the cacao nibs and vanilla. Oh, and the toasted coconut. This beer is topped off with toasted coconut that brings this beer into a full-on dessert category.

Mango Lassi ~ Soured rye malt, lactose, mangos, huell melon hops, and fermented with a Belgian yeast ~
This beer really captures the rich, creamy, mango-lush, beauty of a mango lassi – but this beer is still beer! It’s a hard one to fit into a style… so maybe we’ll just describe how we arrived at this delicious end!
We started with a malt base that features a touch of rye malt to bring some added spicy complexity to the beer. We then soured the wort to bring in a yogurt-like character from the lactobacillus. Then, in the boil, we added huell melon hops to bring in a ripe melon aroma. We also added milk sugar for a slightly sweet, creamy mouthfeel. We fermented this beer with a Belgian yeast that contributes huge fruity notes. Finally, so many pounds of pureed mango were added after primary fermentation.
All worth it though – this is a good beer.
