INTRODUCING THE EXIT SERIES OF BIG BOTTLE BEERS
The Exit Series is a multi-year collection of extremely limited release beers celebrating the great state of New Jersey. Each beer will focus on the unique aspect of an individual exit, whether it’s an ingredient, attitude or weird event. The releases won’t follow a pattern, instead, they’ll bounce around the state as the whim strikes us.
For the first release, we chose Exit 4–right up the street from the Flying Fish brewery. Because we were one of the first craft brewers to embrace Belgian-style beers, we’ve chosen as our representative beer, a Belgian trippel finished with plenty of American hops.
This inspired Belgian-style Trippel has a hazy golden hue and the aroma of citrus with hints of banana and clove. Predominant Belgian malt flavors give way to a subdued bitterness in the finish. Bottle conditioned, this beer will develop as it ages.
This One Time Only Release will start shipping March 1, 2009. Please note that because of production times, this beer will not be available for sale at the brewery until Saturday April 4.

MAD BATTER BEER DINNER
One of our favorite restaurants and a long-time supporter of Flying Fish is Cape May’s Mad Batter. And despite being owned by a NY Mets fan, they put together great beer dinners, with some good-natured baseball razzing thrown in. The next dinner will be March 27. ESPRESSO PORTER GOING, GOING, GONE
We’ve shipped it all, so what’s in the store is what there is. We don’t even have any at the brewery.
Initially released as our 10th anniversary beer, this porter has become popular as our late winter seasonal. Note the aromas of toffee, licorice and coffee roastiness. Then take a sip–there’s a malty richness on the palate followed by chocolate, coffee, spices and perhaps even some licorice character from the Mount Rainier hops. The beer finishes with a subtle black cherry/berry character from rare Ethiopian Sidamo beans.
What’s different this year is that we’re working Crescent Moon Coffee, a small batch artisan roaster of certified organic coffees in Mullica Hill, NJ. After many hours of tasting and talking (well, the caffeine might have added to the talking) we developed a specially roasted blend of five estate coffees that bring out the depth of the beer, yet still present a distinct coffee character. The blend, which includes unique Sumatran and Ethiopian beans, boasts berries, spice and chocolate along with a roastiness that compliment the dark brewers malts.
