New Brew Thursday : Oude Gueuze Tilquin à L’Ancienne : Gueuzerie Tilquin
This week we’re going to Belgium … metaphorically. We’re drinking an amazing Gueuze from Gueuzerie Tilquin called Oude Gueuze Tilquin à L’Ancienne.
John drinks beer in Seattle, Stephen hates the literal-net, Matt won’t pour his beer, and we have a fly as our special guest!
We reminisce about our first Gueuze experience and lament the back sweetening of Lambics from certain lambic producers, and speculate about the Gueuz’ing process, while Stephen gueuzes all over Matt.
On Master Pairings with Dr. Bill, Stephen joins Bill as a co-host rather than a guest for an awesome pairing of comfort, rainy day food. He takes Stone Brewing Co’s Arrogant Bastard and pairs it with Tomato soup and an amazing gourmet grilled cheese sandwich.
When we come back, Stephen is very regular, John likes side by sides, and which gueuze is your favorite gateway gueuze?

FYI, Tilquin does not buy “aged” lambic and then blend it. They buy wort from several different people, barrel age them at the brewery then blend it. First batch of Oude Gueuze Tilquin à L’Ancienne was only 1 and 2 due to not having a 3 year old barrel yet.
